Mini Quiche


1 yellow or red pepper diced18 cherry tomatoes halvedHandful of spinach chopped 4 TBSP goat or feta cheese6 whole eggs8 egg whites1 tsp Italian seasoningSalt/pepper to taste


Preheat over to 350 and spray 12 muffin pan with pamEvenly divide peppers, tomatoes, spinach and cheese between 12 muffin cupsIn a bowl mix eggs, egg whites and seasoningsPour egg mixture evenly over veggies. Bake for 24-28 mins (the mini quiches will rise while cooking but will settle as they cool)
